Ingredients

    1 pound frozen winter style veggies (broccoli & cauliflower)
    1 1/2 can low-sodium, fat free chicken broth
    1/2 10 oz can of diced tomatoes with green chilies
    4-5 ounces low fat velveeta, cubed

Directions

Place veggies, tomatoes and broth in large pot and bring to boil. Then lower heat and simmer for 40 minutes. Add cheese and let melt as you stir it. Mash up veggies or leave them whole.

    Made the recipe, but substituted salsa for the dice tomatoes and chilies. Doubled the recipe and froze it in 1 cup servings. Great!!! - 1/31/11

    I LOVE this recipe, I used to use it all the time when I did the SBD several years ago and am so glad I found it again. Only thing I do different is add a little fat free half and half to make it a little creamier. It is so good and with the calorie/carb count a little half and half doesn't hurt. - 9/1/12
