Ingredients

2 lbs lean ground beef
1 cup plain bread crumbs
2 eggs
1 medium onion (diced)
1 small can tomato sauce
1 Tbsp prepared yellow mustard
1 Tbsp Worstishire sauce
3 Tbsp white vinegar
6 Tbsp Splenda brown sugar blend
1 Cup water
Salt & Pepper to taste
Directions
Combine tomato sauce, mustard, worst. sauce, vinegar, Splenda blend, and water in a bowl and whisk to combine into a sauce.
Mix ground beef, eggs, bread crumbs, onion, salt, pepper and about 1/2 cup of the sauce in a bowl with your hands to combine.
Shape meat into one large loaf (or two smaller - to reduce baking time) into a 9x13 dish. With the handle of a wooden spoon, poke holes throughout loaf (loaves) almost to the bottom ***This step is important to insure the sauce penetrates through the complete loaf*** Pour sauce into holes and all around the loaf (loaves). Bake at 350 for 60-70 minutes, ocassionally spooning sauce over loaves. Sauce will thicken as it bakes.
Makes 10 servings
Goes well with green bean casserole and mashed potatoes.
For a little variation, you can roll the meat mixture into walnut-sized balls and cook in med/high skillet. When browned on all sides, add sauce and cook until it's thickened then serve over rice.
Makes GREAT leftovers, if your family leaves any in the pan ;)
