Introduction

This soup is a creamy blend of potatoes, spinach and other vegetables. This soup is a creamy blend of potatoes, spinach and other vegetables.
Number of Servings: 10

Ingredients

    1 onion, chopped
    3 tbs garlic, chopped
    5 cups baby spinach
    1 package of baby vegetables or 1.5 cups of fresh vegetables
    5 small potatoes or 3 medium sized potatoes, peeled and chopped
    3 cups chicken broth
    2 cups skim milk
    4oz plain greek yogurt
    3 tbs salted butter
    Salt and pepper to taste

Directions

Saute garlic and onion in olive oil until translucent.
Add chicken broth, spinach, baby vegetables, butter and yogurt. Stir and let simmer until potatoes and vegetables are soft, or about 30 minutes. It is OK if broth isn't smooth.
Take soup off heat and let cool for 30 minutes.
Either using an immersion blender, a regular blender or a food processor, blend mixture until creamy.
Add salt and pepper to taste.
