Ingredients

*Whole Wheat Pastry Flour (white whole wheat would also work), 4 tablespoons
Cocoa, dry powder, unsweetened, 2 tbsp
4 tbsp splenda
1/8 tsp baking powder
Salt, 1 dash
Mashed vegetable/fruit puree, 1/4 cup (I used carrots)
1 egg
3 tbsp skim milk
dash of vanilla, or another liquer (optional)
nuts (optional)
Directions
In a bowl:
Combine all dry ingredients to a bowl. Add egg, fruit/vegetable puree (I used fork-mashed steamed carrots because I didn't have any applesauce), milk, and a little vanilla. I also added chopped pecans.
Spray a large mug with oil ( I used olive oil spray), add batter and cook in microwave 2.5- 3minutes.
Cake has a pudding-like texture. Two good sized servings out of this. Yummy with milk, ice cream, and/or whipped topping.
