homemade vegan patties, using only pantry items! homemade vegan patties, using only pantry items!

Ingredients

    1 3/4 cup chickpeas
    1 cup cooked brown rice
    1/4 cup tahini
    1 onion
    handful of dried mushrooms, reconstituted
    breadcrumbs (just enough to make patties form)

Directions

makes 6-7 patties

dice onion and saute until translucent. dice mushrooms and add to onion and cook for 3 more minutes. add onion and mushroom mixture to food processor and process. add in brown rice, tahini, and chickpeas and process. add breadcrumbs little by little until you are able to form patties (you'll need to check this step by hand).

these grill up nicely on the outside but are moist on the inside.
