Ingredients
-
1 pound lean ground turkey
1 cup chopped onion
2 cups uncooked rotini
1 can of stewed tomatoes, cut up, or used diced tomatoes
1 can of rotel tomatoes
salt and pepper to taste
i like to add some fresh garlic or garlic powder to taste.
1 tbsp of cumin (or to your taste) once i put cinnamon in by accident, thinking it was the cumin, it was the best pot of Goulash ever! if you like spicy foods, you will love this with some chili powder in it. you can do so much with this recipe. have fun with it and share your experiments!
Directions
use a huge frying pan or a large pot to fry up your turkey and onion. i use a bit of pam spray since this is such lean meat.
once that has cooked thoroughly, add your canned tomatoes with the juices and stir in your uncooked pasta. put a lid on this, over a low heat. stir often. it takes about 15-20 minutes to get the pasta cooked firm. occasionally, you will have to add a bit of liquid to help with the pasta cooking. you can always add another can of tomatoes.
my husband would eat this every night! if you make a double batch, it is great the next day too!
