Introduction

Light coconut milk and a citrus dipping sauce make whole wheat French Toast a little tropical. This recipe is designed for one, but easy to multiply for many. For kids, cut the fried toast in strips and give each a cupcake liner of their own 2 Tbsps. of sauce to dip in. Less waste, more fun! Myself, I use a shot glass to dip in. Ingredients

    2 slices Milton's Healthy Whole Grain Bread or other 90 calories per slice bread, toasted or a few days old. (This bread keeps very well so toasting helps it not be soggy.)
    1 fresh egg fork-beaten with 2 Tbsp light coconut milk and 1/2 tsp. ground cinnamon and 1/2 packet of zero calorie sweetener such as Splenda or Truvia.
    1 Tbsp orange marmalade mixed with 1 Tbsp. lime juice and the other half packet of sweetener.
    Non-stick Spray and a pat of butter (optional)

Directions

2 slices of 90-calorie bread and 1 egg makes one serving.
Toast two slices of bread and cut each into halves. Beat together with a fork in a shallow bowl the egg, light coconut milk, cinnamon and 1/2 packet of zero-calorie sweetener.
Spray a non-stick skillet with canola spray, preheat on med-hi and if desired, melt a pat of butter or 1/3 Tbsp (for flavor). Dip the toast pieces into the egg mixture to coat well, and brown on both sides. While the toast is browning, combine marmalade and lime juice and other half packet of sweetener in a custard bowl and microwave 30 seconds or just to melt marmalade. Stir to mix and serve as dipping sauce or pour over toast.
