Non-stick cooking spray
1 C. uncooked long grain brown rice
1/2 tsp. salt
2 1/2 C. hot water
1 can cream of chicken soup (98% fat free)
1/2 C. fat free sour cream
2 cans albacore tuna (packed in water), drained
1 16 oz. pkg. green peas
1 C. cheddar & monterey jack cheese
Directions
Combine uncooked rice, salt and hot water in 2-quart microwaveable casserole dish that has been sprayed with non-stick cooking spray. Microwave on high for 35 minutes. Cook green peas according to package directions and drain.
Stir soup, sour cream, tuna, and green peas into cooked rice. Mix well. Top with cheddar cheese. Heat in microwave until bubbly in the middle, approximately 5 minutes. Makes 7 1-cup servings.
