Introduction

Uses same spices as for lasagna, except adding cumin, cayenne, and chili powder. Uses same spices as for lasagna, except adding cumin, cayenne, and chili powder.

Ingredients

    2 cups water
    4 cans (28 oz) of stewed tomatoes
    3 cans (40.5 oz) of redskin kidney beans, rinsed
    2 medium onions, chopped, finely
    3 Tbsps of Olive Oil
    Same spices any cook uses for Lasagna
    1 tsp Cumin
    1 tsp cayenne
    1 Tbsp chili powder

Directions

Makes 16 cups of chili (serving size 1 cup).
Saute two finely chopped medium onions in 3 Tbsps of olive oil.
Add 4 cans of stewed Tomatoes and simmer, adding the spices at this time, too.
Add 2 cups water.
After about 4 hours of simmering, add the 3 cans of kidney beans (rinsing them first) and simmer for another 30 minutes, or so.
Done.
