Introduction
Yummy and Healthy! (This recipe modified from my original recipe with canola oil... has 50 less calories and 6 less fat grams)These are a little high in fat, but it does have GOOD fats in it. If you want to save yourself about half the fat, use applesauce instead of oil. You will reduced the calories by 50 calories, and you will save yourself 6 grams of fat. (I was using a base recipe for muffins and adding my own additions, i.e. flaxseed and whole wheat flour instead of refined, so I kept some of the ingredients the same.)
In fact, I'm adding this recipe twice, again with applesauce in the ingredients, for the next time I try this recipe. So if you want to use applesauce instead of canola oil, see my recipes. Ingredients

2 cups Whole Wheat Flour
1/2 cup white sugar
1 Tbsp Brown Sugar
1 Tbsp Baking Powder
1/2 tsp Salt
1/2 cup Flaxseed
1 large Egg
1 1/4 cups Skim Milk
1/3 cup unsweetened applesauce
1 cup Hershey's Semi-Sweet Chocolate Chips
Directions
Makes 12 regular-sized muffins
Preheat oven to 400.
Mix all dry ingredients together.
Beat in egg, milk, vanilla, and applesauce.
Fold in flaxseed and chips.
Bake for 15-25 minutes, or until toothpick is clean. Let cool. ENJOY!
