Introduction

A great way to start a workout. I always eat one of these 15 minutes before I go for a long walk or jog....they are delicious and packed full of nutrients and almost 12 gr of protein per bar. I seal 1/2 of these in a freezer ziplock bag and freeze them until needed and the other batch I also seal in a airtight container and keep in the fridge.
They will keep in the fridge for 3 weeks and for 2 months in the freezer.

Ingredients

    1 cup splenda brown sugar
    2 scoops protein powder - unflavoured
    1 cup chunky peanut butter (smooth is ok)
    1/3 cup butter (unsalted)
    2 tsp vanilla extract
    1 tsp cinnamon
    1/2 tsp nutmeg
    1/2 tsp salt
    2 cups regular oats (not quick cook/not instant)
    1 cup sliced peanuts (or roughly chopped)
    1/2 cup whole flax seeds
    1/2 cup coconut (shredded)
    3/4 cup raisins (golden are my favorite)
    1/2 cup unsalted sunflower seeds
    1/2 cup pumpkin seeds

Directions

Line a 9x12 pan with parchment paper.
Preheat oven to 350 degrees F

In a pot under med-high heat on the stove, melt: splenda brown sugar, peanut butter, butter, vanilla, cinnamon, nutmeg & salt until smooth.

In a bowl add:
2 cups oats, peanuts, coconut, raisins, flax seeds, sunflower & pumpkin seeds, mix well.

Pour the wet mixture over the dry ingredients in the bowl and mix well.

Pour the mixture into the pan lined with parchment paper and use your fingers (dipped in cold water to keep from sticking) to press down the mixture into the pan.

Bake at 350 degrees F for 25-30 minutes

Allow to cool for minimum of 1 hour before removing from pan, allow to completely cool before cutting into bars.

Makes 20 bars
