Introduction

Easy, refreshing side; delicious on a summer day and a nice change from cucumber pickles. Easy, refreshing side; delicious on a summer day and a nice change from cucumber pickles.

Ingredients

    -1.5 cups sliced radishes
    - 1/2 small onion, sliced thin
    - 1 tbsp red wine vinegar
    - .5 cup white vinegar
    - 7-10 whole peppercorns
    - bay leaf
    - 1 tsp salt
    - 1 tsp sugar

Directions

Combine vinegars, pepper, bay leaf, salt and sugar in a non-reactive microwave-safe bowl or measuring cup. Microwave 1 minute, until warm enough that salt and sugar easily dissolve.

Place radishes and onions in non-reactive bowl, jar, or lidded pyrex. Pour liquid over; let sit in refrigerator at least 4 hours. Will keep for about 5 days.

There may be a strange odor when you open the pickles. Don't be alarmed! It is simply a chemical reaction between the radishes and the vinegar, and they will taste like normal (radish-y) pickles.

    Is it possible that some liquid (probably water) is missing from this recipe. I'd like to try it but I can't I can't picture the "liquid" that gets poured over the radishes. Life's too short to make recipes with flaws, so please advise or reassure. - 7/10/11
