Introduction

This is my favorite soup! My mom used to make it when I was a kid and we always served it over white rice. It makes an excellent meal. Make sure to get started early because it takes a long time for the chicken to cook! The Garlic, Salt & Pepper measurements are just a spot to start out. Feel free to add to taste. Ingredients

    Water- 8-10 cups
    Chicken- 3 leg quarters (cut leg from thigh, will cook faster )
    Spinach- 1-2 frozen boxes
    Onion- 1-2 large sliced
    Garlic- start with 3 teaspoons
    Pepper-start with 3 teaspoons
    Salt- start with 1 tablespoon

Directions


1.Place all but onions and spinach in water and bring to boil.
2.Reduce heat to medium and cover.
3.Cook until chicken is done, maybe an hour.
4.Remove chicken and place on a plate to cool.
5.Skim fat off of the broth.
6.Add Spinach and onions to broth and boil.
7.Remove skin and bones from chicken and tear chicken into smaller pieces.
8.Taste broth for saltiness, etc.
9.Add to boiling broth; reduce heat, cover, and simmer.

Serve whe ready or if you choose to make rice, serve when the rice is ready.

Makes about 10 large servings I think. We always have left overs so it's hard to tell!
