with reduced fat and sugar with reduced fat and sugar
Number of Servings: 12

Ingredients

1 1/2 C whole wheat All purpose Flour (such as King Arthur)
    1/3 C sugar
    1/3 C Splenda
    1 Tbsp Baking Powder
    1/2 tsp salt
    1 1/4 C Skim Milk
2 egg whites or 1/2 C egg substitute
1/3 C soybean oil or other trans fat free oil
3 Tbsp melted butter or light margarine
IF you want to reduce the fat even more you can substitute the 3 Tbsp of butter for applesauce or the oil for the applesauce. The applesauce will add a little extra sugar but it will be lower glycemic than granulated sugars!

Directions

Preheat oven to 350 Degrees.
Grease a square baking pan with Pam or similar cooking spray and set aside.

Combine dry ingredients in a separate bowl and set aside. In a large bowl combine sugar, splenda and melted butter/margarine. Next add eggs lightly beaten and then milk. Mix dry into wet ingredients and lastly add the oil and mix lightly.
Bake for 25-35 minutes and watch closely. It is done when a toothpick is inserted and comes out clean!
