Number of Servings: 4

Ingredients

    1/4 c. olive oil
    1 clove garlic, minced
    1 tsp. dried oregano
    1 tsp. dried dill weed
    1 c. bread, cubed
    2 eggs, lightly beaten
    1 10oz. pkg. frozen chopped spinach, thawed & well drained
    1/2 c. feta cheese, crumbled (2oz.)
    4 whole grain white deli flats

    optional toppers: crumbled feta, plain yogurt, red peppers, red onion, tomato, etc.

Directions

In a medium bowl, combine oil, garlic, oregano, dill weed, and 1/4 tsp. black pepper. Stir in bread to coat thoroughly. Stir in eggs, spinach and feta cheese. Mix well. Shape into four 1/2 inch thick patties.

Heat a griddle or large pan over medium heat. Add patties. Cook for 3-4 minutes per side until browned and heated through.

Serve on flats with assorted toppers.

Makes 4 servings.
