Introduction

This recipe takes time and uses 3 bowls, but it is well worth the effort! I usually double the recipe and store the pancakes in individual freezer baggies. Ingredients

    2 cups low-fat buttermilk
    1/2 cup old-fashioned rolled oats
    2/3 cup whole wheat flour
    2/3 cup all-purpose flour
    1/4 cup ground flax seed
    1/4 toasted wheat germ
    1 1/2 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    1 tsp cinnamon
    3 large eggs
    1/4 firmly packed brown sugar
    1 Tbsp canola oil
    2 tsp vanilla extract
    1/4 cup skim milk

1. Mix the buttermilk and oats in a small bowl. Let stand for 15 minutes. While waiting,

2. Whisk in a large bowl: whole wheat flour, all-purpose flour, flax seed, wheat germ, baking powder, baking soda, salt, and cinnamon.

3. Whisk in a medium bowl: eggs, brown sugar, oil, vanilla, and skim milk. (When 15 minutes are up from step 1) Add the buttermilk mixture. Add this mixture to the flour mixture and mix with a rubber spatula just until flour mixture is moistened.

4. Use 1/3 cup batter for each pancake or waffle and cook as normal. Makes 12 pancakes or waffles.
