Introduction

Number of Servings: 12

Ingredients



    * *Wheat flour, white, all-purpose, unenriched, 1.50 cup
    * Flaxseed, .75 cup
    * Oat Bran, .75 cup
    * Brown Sugar, 1 cup, packed
    * Baking Soda, 2 tsp
    * Baking Powder, 1 tsp
    * Salt, .50 tsp
    * Cinnamon, ground, 1 tsp
    * Carrots, raw, 1.50 strip, thin
    * Apples, fresh, 2 medium
    * Raisins, .50 cup, packed
    * Walnuts, 1 cup, chopped
    * Milk, 1%, .75 cup
    * Egg, fresh, 2 large
    * Vanilla Extract, 1 tsp

Directions

I use a 6 1 cup muffin pan.
This mix fills each cup about 1/2 a inch from the top.

I use 6 large muffins, and cut in half. This would make 12 smaller servings, or 6 larger servings.

Healthy Muffins

Ingredients
1 1/2 cups white/wheat flour
3/4 cup flaxseed meal
3/4 cup oat bran
1 cup brown sugar
2 t. baking soda
1 t. baking powder
1/2 t. salt
2 t. ground cinnamon
1 1/2 cups shredded carrots
2 medium apples, peeled, shredded
1/2 cup raisins,
optional1 cup chopped walnuts
3/4 cup milk
2 lg. eggs, beaten
1 t.vanilla extract


Directions
Mix together flour, flaxseed,
oat bran, brown sugar, soda, baking powder, salt and
cinnamon in a large bowl.

Stir in carrots, apples, raisins
and nuts.

Combine milk, eggs and vanilla.

Pour into dry ingredients and stir until moistened.
DO NOT OVER MIX.

Fill muffin cups 3/4 full and bake at 350°
for 15-20 minutes.

Sometimes I don't add in the Carrots.
I usually do 1/2 a cup of walnuts, sometimes Pecans.
I only do 1/2 cup of raisins.

To make it quicker/smoother, you could add in a jar of carrot flavored baby food.
You could also use the applesauce snack cups. I haven't done the ratio for these, so I wouldn't know how much you would need.
I use my food processor for the nuts, and the apple. I like the skin on a apple, but I don't love the skin. I dice one apple with skin on, and peel the other before putting it in the food processor.
