Ingredients

    6 skinned, boned, chicken thighes
    1 clove garlic, finely chopped
    3 Tbl olive oil
    Salt & freshly ground pepper
    2 handfuls cos lettuce leaves
    1/2 cut toasted walnuts
    1 small red onion, thinly sliced
    2 apples, peeled, cored & diced
    150g sour cream
    4 Tbl balsamic vinegar

Directions

Preheat the oven to 200C. Put the chicken thighs, garlic and oil into a bowl, season and mix well. Place the lettuce, walnuts and red oion on to a large serving platter.

Heat a frying pan over moderate heat and fry the chicken thighs until browned. Place the pan in the oven for about 10 minutes or until the chicken is cooked through. Remove from the oven then the pan and rest.

Place the pan back on the heat and add the applies. Fry until tnedeer and golden, then remove.

Slice the chicken thighs across the grain of the meat and place them on the platter with the salad. Add small dollops of sour cream to the chicken. Sprinkle the apples on top.

Return the chicken pan to the heat and when the fat is hot add the balsamic. Scrape the pan with a wooden spoon. Let it bubble, then pour evenly over the salad.
