Introduction

This recipe uses whole wheat flour, ground flaxseed, and wheat germ to provide extra fiber and protein to make a more satisfying breakfast bread or a sweet, nutritious snack.
This recipe also provides plenty of omega-3 with the flax, Eggland's Best egg, Smart Balance Oil, and optional walnuts.
I doubled the recipe to use up all my over-ripe bananas, so I used one whole egg and 7 whole bananas. Feel free to experiment with this recipe.

Ingredients

    3/4 cup all-purpose flour
    1 1/4 cup whole wheat flour
    6 TBSP ground flaxseed
    4 TBSP wheat germ
    2 TBSP Cinnamon Plus Spice Blend (Pampered Chef)
    3/4 tsp baking soda
    1/2 tsp baking powder
    1/2 tsp salt
    2 TBSP Smart Balance Omega Oil
    1/3 cup sugar
    1/3 cup honey
    1/2 cup fat-free milk
    3 1/2 large bananas
    1/2 egg
    1/2 cup chopped walnuts (optional)

Directions

Mix all ingredients together until well-blended using an electric stand mixer or mash bananas and mix by hand.
Can use cinnamon, nutmeg, cloves, allspice, ginger in place of Cinnamon Plus Spice Blend.
Use non-stick cooking spray on pan(s). Bake at 325 degrees for about 30 minutes (16-18 muffins) or about 45 minutes (4 mini loaves or 1 regular loaf). Use toothpick to test for doneness.
Adding walnuts adds 25 calories, 2.5g fat, 16.5mg potassium, 0.5g carbohydrate, 0.25g fiber, and 0.5g protein per serving.
