Ingredients

5 Egg whites
1/2C mushrooms chopped
1/2oz (a light sprinkle) part skim mozzarella
1/4C Ragu Chunky garden style pasta sauce (or your favorite red sauce)
Directions
separate yolks from your egg whites, whisk lightly with a tbs of water, set aside.
Saute` mushrooms in a skillet (omelet pan, small 8 inch skillet). When mushrooms are cooked to your liking (I let them get just barely soft) add egg whites (and any spices you enjoy in your eggs). Let the eggs set up - when they mixture has cooked 2/3 of the way through add the pasta sauce and cheese. Either scramble the mixture, flip it like an omlet or put in a pre-heated oven (325) and cook like a frittata (about 5-10 minutes to cook the rest of the way through).
Goes great as a filling breakfast with a whole grain tortilla, or lunch with a salad. Great pizza flavor without the guilt!
