Introduction

This is my calculated version of Earth Fare's Edamame and Wild Mushrooms that I get in their deli section, but a tad bit better for you with minus the oil ;) ....so wonderful!!!! Ingredients

    1 (16-ounce) bag frozen shelled edamame
    2 tablespoons water
    4 shiitake mushrooms, sliced (you can use regular white if you like, but the shitake make is really special)
    2 tablespoons soy sauce
    1 teaspoon minced garlic
    1 tablespoon fried rice seasoning mix

Directions

(1) Place frozen shelled edamame in a microwave-safe bowl with 2 tablespoons of water.
(2) Cover and cook on high for 6 to 8 minutes, stirring halfway through cooking time. Let stand covered 1 minute.
(3) Meanwhile spray a large skillet with cooking spray and put on medium-high heat.
(4) Add sliced mushrooms and saute for 5 minutes.
(5) Add soy sauce, garlic, fried rice seasoning, and cooked and drained edamame. Stir to combine.

Serve hot or cold.
