Introduction

A great salad that is dinner itself and no lettuce! A great salad that is dinner itself and no lettuce!
Number of Servings: 12

Ingredients

    1 Napa cabbage
    1 bunch green onions
    1 package Ramen noodles (without flavor packet)
    2 Tbl sesame seeds
    1 cup sliced almonds
    1/4 cup olive oil
    1/2 cup Splenda
    1/4 cup rice wine vinegar
    3/4 cup canola oil
    2 Tbl soy sauce
    1-2 lbs boneless skinless chicken breast

Directions

Boil chicken breasts in large pan. Allow to cool and cut into cubes - set aside. In a frying pan, Brown ramen noodles in olive oil. Add sesame seeds and almonds and lightly brown. Let mixture cool. Chop cabbage and onions. In a small saucepan combine sugar, vinegar, canola oil and soy sauce. Bring to a boil for one minute, careful not to boil over. Allow liquid to cool thoroughly. Combine noodles/almond/sesame seed mixture with cabbage and onions in large salad bowl. Add chicken when cooled. Toss with liquid dressing immediately before serving.

Makes 8-10 2 cup servings

    I made a few adjustments to the nutritional calculations to eliminate the sugar and to reflect that the recipe does not include the flavor packet from the ramen noodles (reducing calories and sodium).
