Ingredients

    4 C streamed brown rice (refrigerated)
    1 medium onion chopped
    1 C carrot chopped
    1 C celery diced
    1 Lg egg
    1 C frozen peas
    10 oz Butterball Grilled Chicken Strips diced
    4 Tbsp soy sauce
    1 Tbsp olive oil

Directions

In large skillet or wok saute chopped onion, celery and carrot in olive oil. Scramble egg in seperate skillet using cooking spray. Add chilled rice, peas, egg, and diced chicken. Cook over medium heat until hot. Toss with soy sauce and serve immediately.
