Ingredients

    1 tsp. minced garlic
    4 raw shrimp, shells removed
    2 oz. firm tofu, diced
    1 tbp. chopped bell peppers
    1/2 large carrot
    1/2 tbp. hoisin sauce
    1/2 tbp. oyster sauce
    1 tsp. sesame oil

Directions

*Makes 1 serving*

1. Microwave the chopped carrots with a little bit of water until they are softened.
2. Stir fry garlic and shrimp for 1-2 minutes in 1/2 tsp. oil; remove from pan.
3. Stir fry tofu, bell pepper, and carrots until the tofu is slightly browned (about 4-5 minutes).
4. Add the garlic shrimp, hoisin sauce, and oyster sauce. Stir fry until everything's well mixed (about 1 minute).
5. Serve plain or with whole grain rice.
