Ingredients

*** Pudding
8 c apples, peeled (optional) cored, sliced (1/4 - in slices)
1/4 c splenda brown sugar blend
1/8 c butter
1 tsp olive oil
1 1/2 tsp gr cinnamon
1 egg
1/2 tsp vanilla
3/4 c CarbQuik
3 tsp baking powder
1/4 tsp salt
1/2 c skim milk
*** Brown Sugar Syrup
1/4 c splenda brown sugar blend
2 T flour
1 tsp butter
3/4 c water
1 tsp vanilla
Directions
Pudding: preheat oven to 375 degrees. Lightly spray 1 qt casserole w/Pam. Arrange apple slices in casserole & set aside.
Combine sugar, butter, cinnamon in med-size bowl until smooth. Stir in egg & vanilla.
Combine CarbQuik, bkg powder & salt in sm bowl & add to egg mixture alternately with milk, stirring only until blended.
Spread batter over apple slices.
Syrup: Combine brown sugar, CarbQuik & butter in sm saucepan. Stir in water and heat to boiling, stirring constantly. Boil 2 to 3 minutes, stirring constantly. Remove from heat and stir in vanilla. Pour Syrup over batter. Bake, uncovered, 50 to 55 minutes or until apples are tender. Serve warm or at room temperature.
