Introduction
The basis for this is a recipe I found online at Kelloggs.com and have substituted ground flax for the shortening and molasses for the honey. This is a very healthy combo! Ingredients
-
1 C Whole Wheat Flour
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 Cup All-Bran Original
1/3 C Buttermilk or sour milk (I used more because when I combined it with the All-Bran, step 2 of directions, it looked dry)
1 egg
1/2 C molasses
3/4 C ground flax
Directions
1. Stir together flour, baking powder, soda and salt. Set aside.
2. In medium mixing bowl combine All-Bran and buttermilk. Let stand about 2 minutes or until cereal softens. Add egg, molasses, and ground flax. Beat well. Add flour mixture, stirring only until combined (too much stirring will result in a tough muffin). Portion evenly into nine to twelve 2 -1/2" muffin pan cups which can be coated with cooking spray, I didn't have any and they came out fine.
3. Bake at 400*F about 25 minutes or until golden brown.
NOTE: To make sour milk, stir 1 T vinegar or lemon juice into 1 C milk.
To substitute milk for buttermilk or sour milk, omit buttermilk or sour milk and use 2/3 C milk, 1/4 C molasses, 2-1/2 tsp baking powder, and omit baking soda.
