Introduction

Gluten and dairy free quinoa pancakes--lots of protein and a great snack! Gluten and dairy free quinoa pancakes--lots of protein and a great snack!
Number of Servings: 8

Ingredients

    1 serving cooked quinoa (1/4 cup dry)
    1 scoop Rainbow Protein Powder (or substitute)
    1 cup gluten free flour mix (I used Namaste)
    2 egg whites
    1 tsp canola oil
    1/2 tsp baking powder
    1/2 cup almond milk (I used Almond Breeze unsweetened Vanilla)

Directions

Mix all ingredients together, and make just like pancakes on a warmed pan.

Makes 8 servings

(adapted recipe from original quinoa pancake recipe--just made it gluten/dairy free!)

    I think the quinoa is the seed that is cooked and the Namaste flour is just a all purpose gluten free flour mix. I am sure you could sub any gluten free flour mix. - 6/1/11

    I am unable to find the brand of quinoa flour mix that you recommend. would you know of a quinoa flour mix that i can create myself? this recipe sounds great....i cannot wait to make it! - 7/8/10
