Introduction

Number of Servings: 4

Ingredients

    4 cups of romaine lettuce in bite sizes
    1 small red onion sliced in half moons
    1/2 cup roasted sweet potato *note
    1/3 cup dried cranberries
    1/3 cup sliced almonds roasted
    1 chicken breast cooked to your taste
    1 Tbsp goat cheese
    2 Tbsp extra virgin olive oil
    1 tsp balsamic vinegar
    salt and pepper to your taste


Directions

Mix all ingredients together except the chicken.
Combine well. Cut chicken in bite sizes and decorate the salad.

*Note do not boil the sweet potato will not taste as good.
