Ingredients

    4 c ups romaine lettuce, chopped or torn
    1 medium cucumber, peeled and diced
    1 pint cherry or plum tomatoes, chopped
    3 oz. red onion, chopped
    3 Tbl parsley, chopped
    4 oz. feta cheese
    1/3 cup olive oil
    juice of half a lemon
    1/2 tsp dried sumac
    salt
    pepper


Directions

Chop all salad ingredients and toss with olive oil, lemon, feta cheese, garbanzo beans, and seasonings.

Makes eight 1-cup servings.
