Ingredients

    1 tsp Olive oil
    1.5 bl boneless skinless chicken thighs extra visible fat removed and cut into small pieces
    1 tsp salt
    1 tsp pepper
    1 onion thinly sliced
    1 clove garlic chopped
    2 large baking potatoes peeled and choped into small cubes
    10 kalamata olives
    1 can petite diced tomatoes well drained
    1/2 c chicken broth
    1/4 c white wine
    fresh basil

Directions

Heat oil in large non stick skillet over med-hi heat. Sprinkle thighs with salt and pepper and add to skillet- saute turning ocasionally 5 minutes. Add onion and garlic continue cooking 5 minutes. Stir in Tomatoes, potatoes, olives broth & wine. Cover and reduce heat to low and cook until potatoes are tender and chicken is fully cooked about 20-25 minutes. Remove from heat and stir in fresh chopped basil to taste.
