Introduction

I wanted to make some blueberry muffins and after looking at my favorite muffin recipe I was amazed at how many calories (262 per muffin) and how much fat (9g per muffin) were in the muffins so I altered the recipe by replacing the butter with apple sauce and replacing one of the eggs with 2 egg whites. Hopefully you'll enjoy these muffins as much as I do and won't feel guilty while eating them!

p.s. This recipe is for 12 standard size muffins, I like to make 24 mini muffins so when I get a snack craving I can just grab a little one to satisfy my munchies.

Ingredients

    1/2 cup unsweetened applesauce
    2 cups all-purpose flour
    3/4 - 1 cup sugar ( I use 3/4 cup sugar but some people like their muffins sweeter)
    3 eggs - 1 whole and 2 egg whites
    1/2 Fat Free Soymilk
    2 tsp Baking Powder
    1/2 tsp Salt
    1 tbsp Vanilla
    1 1/2 Cups Blueberries

Directions

1. Preheat oven to 350 degrees F. Grease muffin tin (Or to save those few extra calories try using paper liners!)

2. Sift flour, baking powder,and salt together in a small bowel and set aside.

3. Cream applesauce and sugar together. Add the egg and egg whites and beat well. Add soymilk and flour mixture. Beat until combined. Fold in blueberries.

4. Fill muffin cups 2/3 full. Bake at 350 degrees F for 25 to 30 minutes. When fully cooked you should be able to insert a toothpick in the center and it should come out clean.
