Introduction

Normal banana bread with prunes instead of oil. Normal banana bread with prunes instead of oil.

Ingredients

    3 cups of whole wheat flour
    1 cup of oatmeal
    1 cup of sugar
    8 prunes
    6 tablespoons of water
    2 tsp of baking soda
    2 tbsp of allspice
    3/4 cup of nonfat milk
    2.5 cups of mashed banana

Directions

Place prunes and water in food processor, blend into paste. Add milk, sugar, eggs, baking soda, allspice and bananas and process until a liquid. Pour into another bowl and add in whole wheat flour one cup at a time. When all flour added, add in one cup of oatmeal.

Spray bundt pan and add batter to pan. Place in oven preheated to 325 and bake until done, approximately one hour.
