Ingredients

    6 inch corn tortillas (12), 2 cups salsa, 1 whole onion, 2 whole bell peppers, 1/2 c. diced tomatoes, 1 cup cream cheese, 1 lb of chicken in bite size pieces, 1 bag of finely shredded mexican cheese.

Directions

Preheat oven to 400 deg.
in skillet, cook chicken, add chopped peppers and onion, cook until chicken is well done, add salsa and corn to mixture. layer 6 corn tortillas, 1/2 c. sour cream and 1/2 of chicken mixture, and 1/2 c. mexican cheese in a 13x9 baking dish. repeat layer 1x.
bake for 40 min.

    I would add some thinly sliced tomatoes between each layer or add a can of drained diced tomatoes. - 4/28/12
