Number of Servings: 6

Ingredients

    Ground Turkey - 1 lb.
    Low-fat Refried Beans - 1 can
    No Salt Added Diced Tomatoes - 1 can
    Chili Powder - 2 Tablespoons
    Garlic Powder -1/2 Teaspoon
    Crushed Red Pepper - 1/2 Teaspoon
    Ground Oregano - 1/2 Teaspoon
    Paprika -1Teaspoon
    Ground Cumin - 3 Teaspoons
    Black Pepper - 2 Teaspoons
    Onion - 1 Medium
    Jalapeno Pepper - 1 Large
    Whole Grain Tortillas (8") - 6 Each
    Low-fat Shredded Cheese - 2 Cups

Directions

1. Brown the ground turkey in a large skillet over Medium heat. About 15 minutes.
2. While it is browning, chop up a medium onion and the jalapeno pepper. Add to turkey as it cooks.
3. Add Refried Beans to turkey, Mix in.
4. Add Diced Tomatoes, do NOT drain, Mix in.
5. As this mixture heats, mix together all the spices. Add to turkey and stir in.
6. Reduce heat to Low and Cover. Stir occassionally. Simmer 5 minutes.
7. Add approximately 1 cup of mixture to tortilla. Roll tortilla and place in square baking dish.
Sprinkle remainder of mixture over the tortillas.
8. Sprinkle the cheese over the top of all.
9. Place the pan in a pre-heated oven at 325 for 5 minutesor until the cheese melts.

Serve with rice on the side and some low-fat sour cream.

    Way too many spices in this! I followed the recipe to a T. Double checking my measurements to make sure i was reading it right and it was too much. If i try this again i'm not using as many spices and might try putting some sour cream mixed into the turkey mixture. Sorry for the bad rating :( - 8/14/07
