Ingredients

1/2 lb. deli roast beef, cut into 1/2-in. wide strips
3 cups mesclun greens
1 cup broccoli florets, cut into bite-size chunks
2/3 cup grape or cherry tomatoes, halved
2 scallions, thinly sliced
3 tbsp. Parmesan cheese
2 tbsp. olive oil
Juice of one lemon
Ground black pepper
Kosher salt, to taste
1 tbsp. capers, optional
Directions
~Arrange the mixed greens on a large platter and arrange broccoli on top of the greens in a ring.
~Drizzle one tablespoon of oil over the greens, followed by 1/2 of the lemon juice.
~Sprinkle with salt and pepper, to taste
~Place the roast beef strips inside of the broccoli ring, and drizzle again with the remaining oil and lemon juice. Add more salt and pepper, if desired
~Sprinkle the parmesan cheese over the salad, and finally top the whole thing with the chopped tomatoes.
Serve to your adoring fans along with crusty bread and a delicious, cold drink!
