Introduction

Number of Servings: 8

Ingredients

    5 lbs red skinned potatoes, cooked
    1 bunch green onions/scallions, chopped
    4 hard boiled egg whites, chopped
    1.5 cups fat free plain yogurt
    4 tbsp mayo
    1 tbsp olive oil
    1-2 tbsp vinegar
    1 tsp yellow mustard
    2 tsp dill weed
    1 tsp oregano
    salt to taste

Directions

Chop cooked potatoes in cubes. Leave skin on.
Mix with chopped green onions and chopped egg in a large bowl.
In a separate bowl, mix yogurt, mayo, olive oil, vinegar, mustard, dill, oregano and salt if desired. Let mixture rest for a few minutes.
Pour mixture on potatoes and coat them well.
Refrigerate for at least 2 hours before serving.
