Ingredients

6 large eggs
3 T skim milk
1/2 onion, chopped
1 clove garlic, chopped
4 10-inch flour tortillas, cut into large squares or torn
2 links of Turkey Italian Sausage, crumbled and browned
1 large potato, cubed
1 cup shredded cheddar cheese
Directions
1) Preheat oven to 325 degrees.
2) In a large bowl, beat eggs with milk, onion, garlic and a dash of salt & pepper -- set aside.
3) Take casing off sausage links and brown in a frying pan, making small crumbles as you fry.
4) Cut or tear tortillas into 2" squares/pieces and add to egg mixture, making sure each piece is coated.
5) Grease a baking pan (8x8 or 9x13 works fine) and spread tortillas across the bottom. Layer on potatoes, sausage and rest of egg mixture. Top with cheddar cheese.
6) Bake uncovered for 20-25 minutes or until egg is cooked to your liking and cheese is golden brown.
