Ingredients

    1 package of fun-shaped pasta
    1 pound cherry tomatoes, quartered
    1 cup frozen corn
    1 medium green pepper, chopped
    1 small red onion, chopped
    1 2.25-oz. can of sliced black olives, drained
    1/2 c. lime juice
    1/4 c. olive oil
    1 tbsp. red wine vinegar
    1 tbsp. chili powder
    1 tbsp. ground cumin
    1 tsp. sugar
    1 tsp. salt
    1 tsp. garlic powder
    1/8 tsp. ground red pepper, or to taste

Directions

Makes 16 3/4-cup servings.

Cook the pasta as directed, drain. Combine the cooked pasta, tomatoes, corn, green pepper, onion, and olives and mix.
Combine the lime juice, olive oil, vinegar, and all spices and seasonings in a jar with a tight fitting lid. Shake well.
Pour dressing over the pasta mixture and mix well until combined. Cover and refrigerate for at least an hour before you plan to use the salad.
