This recipe can easily be made healthier w/ low fat - low cal tortillas, enchilada sauce, cream cheese, & cheese! Serve w/refried beans and YUMM-O

Number of Servings: 8

Ingredients

    2 lbs boneless/skinless chicken breast
    1/2 tsp salt
    1/2 tsp white pepper
    1 tsp cumin
    1 tsp paprika
    1 tsp Italian seasoning
    5 cloves garlic

    8 mission flour tortillas (small/fajita - 100 cal/each)
    1 c. Kraft Mexican Cheese (2%)
    8 oz. regular cream cheese
    1 can of Old El Paso mild enchilada sauce (19 oz/each)

Directions

*Cook chicken and seasonings in crock pot for 6-8 hrs. *Shred then add cream cheese until melted.
*Place chicken mixture evenly in tortillas & roll then place in a non-stick (or greased) dish
* pour enchilada sauce evenly over the 8 enchiladas
* sprinkle cheese evenly on top
* bake @ 350 degrees covered for about 25 minutes then uncover for the last 5 minutes to brown cheese slightly
