I love quiche and wanted something other than oven cooked or skillet cooked asparagus for dinner. I found a puff pastry at Aldi and decided to give it a try. Enjoy! Ingredients

    -about 12 oz. crisp tender cooked fresh asparagus, cut into bite sized pieces
    -3 T 50% less fat Hormel bacon bits

    -3 large eggs
    -1/2 C skim milk
    -1/4 C grated parmesan cheese, divided into 1/4 C each
    -1/4 t salt
    -1/8 t white pepper
    -a pinch which I think is about 1/8 t ground nutmeg
    -1 T dried chives
    -1/2 C or 56g Kraft 2% sharp cheddar shredded cheese
    -1 sheet of Aldi's Belmont puff pastry, defrosted

Directions

--Wash and chop the asparagus into bite size pieces. Make sure to cut off the woody ends, if there are any. Cook asparagus in a large skillet over med. heat in shallow water until fork tender. Drain and set aside. You will later put it in the puff pastry.

--Lightly spray a 9 in. pastry dish or whatever shape you choose and form the puff pastry in it. If you have remaining pieces, then just lay them on top (gently sprayed) after all ingredients are added.

--In a medium mixing bowl mix the eggs, bacon bits, milk, parmesan, salt, pepper, nutmeg and chives with a wisk well. Pour over the asparagus and top with sprayed pieces if you have them.

--Bake at 400 degrees for 10 minutes then reduce temperature to 350 and bake for 23-25 minutes or until a knife in the middle comes out clean and pastry is golden brown. Let stand 15 minutes before cutting and serving.

--Makes 8 servings.
