Ingredients

1.5 cup whole wheat flour
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 fl oz lemon or lime juice
1/2 tsp lemon or lime rind
1/3 cup honey
1/4 cup margarine or unsalted butter
1/3 cup nonfat or low-fat milk
1 large egg
1/5 cup fresh or frozen blueberries
Directions
1. Preheat oven to 350°F. Grease 12 muffin cups.
2. Melt together the honey and butter.
3. In a large mixing bowl, combine the flour, soda, powder, and salt. Make a well in the center of the dry mixture.
4. Beat the remaining ingredients (except the berries) together. Pour the beaten mixture into the well. Stir gently until it is just-blended, gradually adding the berries.
5. Fill the muffin cups 2/3 full.
6. Bake 30-35 minutes.
7. Cool in pans 10 minutes before removing.
Makes 12 muffins.
