Number of Servings: 6

Ingredients

    2 medium zucchini
    1 jar of spaghetti sauce (or aprox. 24 oz of homemade sauce)

    16 oz. Perdue Fit and Easy ground turkey breast
    1-2 tsp Italian seasoning
    1-2 tsp. garlic-minced
    1 tsp ground red cayenne pepper (optional)

    Cheese filling:
    1.5 c. fat free cottage cheese
    2 tsp. garlic- minced
    1.25 c. shredded mozzarella cheese-- reserve .25 cup of cheese for the top of the dish
    2-3 tsp. Italian seasoning

    1. Preheat oven to350 degrees

    2. Brown ground turkey with the spices

    3. Cut zucchini lengthwise into thin strips

    4. Mix together all ingredients for filling.

    5.Spread a thin layer of sauce on the bottom of a 9X 13 baking dish

    6. Place a single layer of zucchini strips on top of the layer of sauce.

    7. Spread a thin layer of the cheese filling on top of the layer of zucchini

    8. Spread 1/2 of meat over the top of the layer of cheese.

    9. Repeat steps 4-7 one time

    10. Sprinkle remaining .25 c. of mozzarella cheese over the top of the dish




Directions

Bake in 350 degree oven

Makes 6 4 in. X 5 in. pieces
Serving size can be cut down, as these are generous pieces.
