Number of Servings: 10
Ingredients

1 cup oat bran
1/2 cup splenda
1 tsp soda
1 tsp baking powder
1 tsp cinnamon
1/2 cup whole wheat flour
1 cup uncooked oats
1 cup boiling water
1 egg white
1/4 cup unsweetened applesauce
vanilla
1/4 cup semisweet chocolate chips
1/2 cup frozen cranberries cut in pieces
Directions
in a small bowl, add whole oats and boiling water... set aside
in a bigger bowl, add the oat bran, splenda, flour, soda, baking powder, cinnamon, chocolate chips and cranberries.
when the water has been absorbed by the oats (10 minutes) mix in the egg, vanilla, and applesauce.
add this mixture into the bigger bowl and mix with wooded spoon until all blended together.
Add to muffin pan... I want bigger muffins so I make only 10.
Bake at 375 for 10-11 minutes
