Ingredients

1 cup black beans, canned
1/2 cup frozen corn (off the cob)
1 diced tomato or 2 roma tomatoes
1/2 cup chopped onions
1/2 cup diced bell pepper
1/2 cup diced celery
1/2 sliced okra (you can also find this frozen)
1/2 cup dry couscous
1/2 cup water
1 Tbsp butter (optional, not included in nutrition)
Directions
Over medium high heat, put all of your vegetables in a pot. Stir occasionally until the onions are translucent, and then pour in the beans. Bring it to a boil, then reduce heat and let simmer.
In a separate pot, bring 1/2 water and optional butter to a boil and then stir in the couscous quickly, remove from heat, and let it sit for 4-5 minutes.
Stir it all together, and it's ready to eat! I like to eat it by itself, but feel free to spice it up by rolling it into a tortilla, or stuffing it into a bell pepper. Or for an easy black bean dip, leave out the couscous and throw it all into a food processor. Enjoy!
