Ingredients



    * *Margarin Becel, 1 tsp
    * Onions, raw, 1 small
    * Mushrooms, fresh, .5 cup, pieces or slices
    * Green Peppers (bell peppers), .4 cup, strips
    * Red Ripe Tomatoes, 2 medium whole
    * Olive Oil, 1 1tsp
    * Parmesan Cheese, grated, 1 tbsp
    * Egg, fresh, 1 large
    * Egg white, 5 serving

Directions

Melt the margarine in a pan and saute the onion, mushrooms, red pepper, garlic and tomatoes for 5 to 10 minutes or until soft.
Beat the eggs with the water, herbs and salt and pepper to taste.
Heat the oil in an omelette pan and pour in the egg mixture.
Cook over a medium heat for 1 minute or until the mixture is set on the bottom.
Spoon the vegetables over the omelette and continue to cook for 1 to 2 minutes.
Sprinkle with Parmesan cheese, cut into two and serve immediately

    I'm always on the look out for such stuff---need to feel stuffed at Breakfast 'coz that's the only Meal I really look forward to!!!Thanks for this Recipe---large enough to look big---light where it really counts---in the Calories!!! - 7/22/10

    Bad
    Mediterranean dishes do not use margarine, olive oil is used. Sometimes real butter.

    Margarine is really bad for your health and weight control, if you want to lower your calories, just use olive oil spray.

    we dont mix eggs and water, if u want fluffy omelette just beat eggs fast, hand mixer h

    Thanks for your feed back!!! I have used a combination of becel margarine and olive oil in the cooking ...Becel is not normal margarine its good for heart health . I am not saying this is authentic This is my own version of the omelet.
