Introduction

This is a quick easy no fuss side dish to any dinner. We pair this with chicken breast or salmon filets that we prepare of the Foreman grill at the same time. A delicious resturant quality meal after work all in under 10 minutes.

Ingredients

    1 cup couscous - dry
    1 cup water
    1/4 tsp of salt (optional)
    1/2 tbsp butter (optional)

    2 tbsp olive oil
    3 cloves garlic or 1 tbsp minced from jar (you can also use garlic powder)
    2 cups fresh spinach
    2 tbsp lemon juice (adds a little zing to the typically bland couscous)
    2 tbsp basil (you can use fresh if desired)
    1/2 cup crumbled feta cheese (optional)

Directions

Prepare couscous:
Boil one cup of water in a 2 quart sauce pan, add in salt and butter. (both optional) As soon as the water begins to boil, remove from heat, stir in one cup of dry couscous and put a lid on the pan and set aside for 5 minutes. Fluff with fork.

While the couscous is set aside, in a separate 2 quart sauce pan heat 2 tablespoons of olive oil, add in desired garlic. I prefer to use the already minced garlic that comes in a jar - I use 1 tablespoon which I equated to 3 cloves. You can also use garlic powder if desired. Add in 2 cups of fresh spinach leaves and cook down. Stir in the prepared couscous and mix until thoroughly heated and blended. Add in 2 tablespoons of lemon juice and 2 tablespoons of basil (you can also use fresh basil here if desired). I then crumble approximately 1/2 cup of feta cheese (optional) on top and serve.

Makes approximately 4 1-cup servings - enjoy!~
