Ingredients

    5 C cubed potatoes boiled
    2 eggs, chopped
    2 oz jar diced pimento
    1/8 C minced onion
    2/3 C light sour cream
    1/8 C light mayo
    1/2 Tbsp Nature's Seasoning
    1/4 tsp black pepper
    1/4 C yellow mustard
    1/3 C chopped pickles
    1/8 C pickle juice

Directions

Mix all ingredients together, refrigerator over night for best flavor. Makes 9 1-cup servings
