Ingredients

The Juice of one Lemon
50 Grams of Coconut meat - Fresh - no juice
1 Jalepeno (Seeds removed)
1 Tablespoon of olive Oil
2 Chicken Breasts.
Directions
Pulse the lemon juice, olive oil, coconut, jalepeno together in a food processor.
Set aside.
Cut your chicken breasts into cubes or strips - fairly thick if you're going to grill them - which I am.
Coat the chicken with the mixture of fresh ingredients in a bowl and cover and put in the fridge to marinate.
later on when you're ready to cook, grill the chicken or pan fry in a non stick pan with a spritz of cooking spray or olive oil from your misto.
Serve on top of rice with your choice of veggie or as a rice bowl. The calories here are not accounted for as different rice has different values. You need to calculate that seperately.
