Introduction

Ingredients

1 lb whole wheat spaghetti
1/2 C reduced sodium soy sauce
2 tbsp each-sesame and canola oil
2 tbsp rice wine vinegar or lime juice
1.5 tsp crushed red pepper flakes
1 bunch scallions, sliced and divided
1/4 C chopped fresh cilantro(really needs to be fresh not dried.)
1 medium red bell pepper, thinly sliced
4 C snow peas, trimmed and sliced on the bias
1/2 toasted sesame seeds
Directions
1. Cook pasta according to instructions on package, when done rinse thoroughly under cold water.
2. Meanwhile whisk soy sauce, sesame oil, canola oil, vinegar, crushed red pepper, 1/4 C of scallions, 2 tbsp cilantro. Add cooled noodles, snow peas, and bell pepper. Toss to coat.
3. To serve mix in sesame seeds and garnish with remaining scallions and cilantro.
Note: Prepare through step two up to two hours in advance.
