Introduction

Ingredients

SALAD INGREDIENTS
1/2 lb spinach
1/2 lb fresh leaf lettuce
1 small red onion
1 lb bacon fried (save 1/3 dub of bacon grease for dressing ) & crumbled into small pieces
6 hard boiled eggs
Clean spinahc & lettuce well. Separate onion into rings. Chop eggs & togg together.
DRESSING INGREDIENTS:
1/3 Cup bacon drippings
3/4 Cup onion diced fine
2 Tbsp flour
1-2 Tbsp sugar
1 dash black pepper
3/4 Cup water
1/2 Cup vinegar (your choice cider, red wine, white)
Directions
Clean spinach and lettuce well. Separate onion into rings. Chop eggs & toss together. Place in large bowl.
DRESSING INGREDIENTS
1/3 Cup bacon drippings
3/4 Cup onion diced fine
2 Tbsp flour
1 1/2 tsp salt
1 dash pepper
3/4 Cup water
1/2 Cup vinegar
Add flour to bacon drippings and stir constantly. Blend in onions, sugar, sale & pepper. Slowly add water to the base and then the vinegar. You may want to add more sugar to taste and more water for a thinner dressing.
Serve dressing separate in a bowl. Make sure the dressing is warm when you serve this salad.
